This easy turkey soup is warm, comforting, and a great way to use up leftover turkey. With fresh vegetables, herbs, and a flavorful broth, it’s perfect for chilly days!


Ingredients

•2 tbsp olive oil

•1 small onion, diced

•2 carrots, sliced

•2 celery stalks, sliced

•3 cloves garlic, minced

•6 cups turkey broth (or chicken broth)

•2 cups cooked turkey, shredded

•1 tsp salt (or to taste)

•1/2 tsp black pepper

•1/2 tsp dried thyme

•1/2 tsp dried oregano

•1 bay leaf

•1 cup egg noodles (or rice)

•1/4 cup fresh parsley, chopped

•1 tbsp lemon juice (optional)


Instructions

1.In a large pot, heat olive oil over medium heat.

2.Sauté onion, carrots, and celery for 5 minutes.

3.Add garlic and cook for another minute.

4.Pour in the broth and bring to a boil.

5.Stir in turkey, salt, pepper, thyme, oregano, and bay leaf. Simmer for 20 minutes.

6.Add egg noodles (or rice) and cook until tender.

7.Remove bay leaf and stir in parsley and lemon juice.

8.Adjust seasoning and serve hot.

Notes

•For a richer broth, use homemade turkey stock.

•Substitute noodles with rice or barley for variety.

•Store leftovers in the fridge for up to 3 days or freeze for longer storage.
