Ingredients

For the Rice Base:

• 3 cups cooked sushi rice

• 3 tbsp rice vinegar

• 1 tbsp sugar

• 1 tsp salt

• 2 tbsp furikake seasoning (for layering)

For the Seafood Layer:

• 1 lb imitation crab (or real crab, shrimp, or salmon), shredded

• ½ cup cream cheese, softened

• ½ cup Japanese mayo (Kewpie)

• 1 tbsp sriracha (adjust to taste)

• 1 tbsp soy sauce

• 1 tsp sesame oil

Toppings & Garnish:

• 2 tbsp furikake seasoning

• 2 tbsp spicy mayo (Kewpie mayo + sriracha mix)

• 2 tbsp unagi (eel) sauce or teriyaki sauce

• 1 tbsp chopped green onions

• 1 sheet nori (seaweed), cut into strips (for serving)


Instructions

1. Prepare the Rice:

• Cook sushi rice according to package instructions.

• In a small bowl, mix rice vinegar, sugar, and salt until dissolved.

• Stir into warm rice and mix well.

• Spread rice evenly into a 9×9-inch baking dish and sprinkle with furikake seasoning.

2. Make the Seafood Mixture:

• In a bowl, mix shredded imitation crab (or seafood of choice), cream cheese, mayo, sriracha, soy sauce, and sesame oil.

• Spread this mixture evenly over the rice layer.

3. Bake:

• Preheat oven to 375°F (190°C).

• Bake for 15 minutes, then broil for an additional 3-5 minutes until slightly golden on top.

4. Add Toppings:

• Drizzle with spicy mayo and eel sauce.

• Sprinkle with more furikake and chopped green onions.

5. Serve:

• Scoop onto nori sheets or enjoy with a spoon.

Notes

• Swap imitation crab for fresh salmon, tuna, or shrimp.

• Add masago (fish roe) for extra umami.

• Adjust spiciness with more or less sriracha.
