Ingredients

Dry Ingredients:

• 2 ½ cups whole wheat flour

• 1 cup all-purpose flour

• 1 packet (2 ¼ teaspoons) active dry yeast

• 1 teaspoon salt

Wet Ingredients:

• 1 cup warm water (110°F/45°C)

• 2 tablespoons honey or maple syrup

• 1 tablespoon olive oil

Mix-ins & Topping:

• ¼ cup sunflower seeds

• ¼ cup pumpkin seeds (pepitas)

• 1 tablespoon flaxseeds (optional)

• 1 tablespoon rolled oats (for topping)


Instructions

Activate the Yeast:

1. In a small bowl, mix warm water, honey (or maple syrup), and yeast. Let it sit for 5–10 minutes until foamy.

Prepare the Dough:

2. In a large mixing bowl, combine whole wheat flour, all-purpose flour, and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough:

3. Transfer the dough to a floured surface and knead for about 8–10 minutes, until smooth and elastic.

4. Gradually knead in the sunflower seeds, pumpkin seeds, and flaxseeds (if using).

First Rise:

5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Dough:

6. Punch down the dough and shape it into a loaf. Place it in a greased or parchment-lined loaf pan. Sprinkle the top with rolled oats.

Second Rise:

7. Cover and let the dough rise again for 30–40 minutes.

Bake the Bread:

8. Preheat the oven to 375°F (190°C). Bake the bread for 30–35 minutes, until golden brown and sounds hollow when tapped.

Cool and Serve:

9. Let the bread cool on a wire rack before slicing. Enjoy toasted or with butter, jam, or nut butter!

Notes

• Store the bread in an airtight container at room temperature for up to 3 days, or freeze slices for longer storage.

• Substitute all-purpose flour with more whole wheat flour for a denser, fiber-rich loaf.
