Description
Fluffy, protein-rich egg bites made with cottage cheese and Gruyère, baked to perfection in a water bath—just like Starbucks!
Ingredients
• 4 large eggs
• 1/2 cup cottage cheese
• 1/2 cup shredded Gruyère cheese
• 1/4 cup shredded Monterey Jack cheese
• 1/4 cup cooked bacon, crumbled
• 1/4 tsp salt
• 1/8 tsp black pepper
• 1/4 tsp garlic powder
• 1/2 tsp butter (for greasing)
Instructions
1. Preheat the oven to 300°F (150°C) and grease a muffin tin.
2. Blend eggs, cottage cheese, Gruyère, Monterey Jack, salt, pepper, and garlic powder until smooth.
3. Pour the mixture into the muffin tin, filling each cup 3/4 full.
4. Top with crumbled bacon.
5. Place the muffin tin in a larger baking dish with hot water for a water bath.
6. Bake for 30 minutes until set.
7. Let cool slightly, then remove from the tin.
8. Enjoy warm or store in the fridge for meal prep.
Notes
• Can be stored in the refrigerator for up to 4 days.
• Reheat in the microwave for 30 seconds before serving.
• Swap bacon for spinach or mushrooms for a vegetarian version.
