Description

A classic shrimp fried rice recipe that’s easy, flavorful, and perfect for a quick meal. Ready in just 20 minutes, it’s a great way to use leftover rice!


Ingredients

• 2 cups cooked and cooled jasmine rice

• 1/2 lb shrimp, peeled and deveined

• 2 tbsp vegetable oil

• 1/2 cup frozen peas and carrots mix

• 2 green onions, chopped

• 2 eggs, beaten

• 2 tbsp soy sauce

• 1 tbsp oyster sauce

• 1 tsp sesame oil

• 2 cloves garlic, minced

• 1/2 tsp ginger, grated

• 1/4 tsp white pepper

• Salt to taste


Instructions

1. Heat 1 tbsp oil in a wok over medium-high heat. Cook shrimp for 2-3 minutes until pink. Remove and set aside.

2. Add another 1 tbsp oil. Pour in beaten eggs, scramble, and remove from the pan.

3. Stir-fry garlic and ginger for 30 seconds.

4. Add rice, peas, and carrots. Stir well.

5. Pour in soy sauce, oyster sauce, sesame oil, and white pepper. Mix evenly.

6. Return shrimp and eggs to the pan. Toss and cook for 1-2 more minutes.

7. Garnish with green onions and serve hot.

Notes

• Use cold, day-old rice for the best texture.

• Avoid overcooking the shrimp to keep them tender.
