Ingredients
For the Cookies:
• 60g (4 tbsp) unsalted butter, softened
• 50g (⅓ cup) powdered sugar
• 1 large egg white
• 60g (½ cup) cake flour, sifted
• ½ tsp vanilla extract
For the White Chocolate Filling:
• 80g (3 oz) high-quality white chocolate, chopped
• 20g (1½ tbsp) heavy cream
Instructions
Make the Cookies:
1. Preheat oven to 160°C (320°F) and line a baking sheet with parchment paper.
2. In a bowl, beat softened butter and powdered sugar until smooth and creamy.
3. Add egg white and vanilla extract, mixing until fully incorporated.
4. Gently fold in the sifted cake flour and mix until a smooth batter forms.
5. Transfer the batter into a piping bag (or use a spoon) and pipe small rectangles (~4×4 cm) onto the baking sheet, leaving space between each.
6. Bake for 8–10 minutes, or until the edges are lightly golden. Remove and let cool completely.
Make the White Chocolate Filling:
7. Heat the heavy cream until warm (not boiling), then pour over the chopped white chocolate. Stir until smooth and melted.
8. Let the chocolate mixture cool slightly to thicken.
Assemble the Cookies:
9. Spread a thin layer of white chocolate filling onto the bottom of one cookie and gently press another cookie on top to sandwich them.
10. Allow cookies to set at room temperature or refrigerate for 15 minutes before serving.
