Description

This slow-cooked pork tenderloin is infused with rich hoisin sauce, garlic, and ginger, creating a flavorful, tender dish. Served over rice, it’s an easy and satisfying meal perfect for busy weeknights.


Ingredients

For the Pork Tenderloin:

• 1 ½ lbs pork tenderloin

• ½ cup hoisin sauce

• ¼ cup low-sodium soy sauce

• ¼ cup honey or brown sugar

• 1 tablespoon rice vinegar

• 1 tablespoon sesame oil

• 1 tablespoon fresh ginger, grated

• 3 cloves garlic, minced

• ½ teaspoon black pepper

• ½ teaspoon red pepper flakes (optional, for spice)

• 1 cup low-sodium chicken broth

• 1 tablespoon cornstarch + 2 tablespoons water (for thickening)

For Serving:

• 2 cups cooked jasmine or brown rice

• 2 green onions, sliced (for garnish)

• 1 tablespoon sesame seeds (for garnish)


Instructions

1. Prepare the sauce – In a small bowl, whisk together hoisin sauce, soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, black pepper, and red pepper flakes.

2. Slow cook the pork – Place the pork tenderloin in the slow cooker and pour the sauce over it. Add the chicken broth.

3. Cook – Cover and cook on low for 6-7 hours or high for 3-4 hours, until the pork is tender and easily shreds.

4. Thicken the sauce – Remove the pork and set aside. In a small bowl, mix cornstarch and water. Stir it into the sauce in the slow cooker and cook on high for 10-15 minutes until thickened.

5. Shred & serve – Slice or shred the pork and return it to the sauce. Serve over cooked rice and garnish with green onions and sesame seeds.

Notes

For extra flavor, sear the pork in a hot pan for 2 minutes per side before adding it to the slow cooker.

• Substitute brown rice or cauliflower rice for a healthier option.
