Inspired by Otto Pizza’s famous mashed potato and bacon pizza, this recipe combines crispy, smoky bacon with creamy mashed potatoes and melty cheese on a crispy, golden crust. The perfect blend of comfort food and gourmet pizza, this dish is a must-try for pizza lovers looking for something unique!
Ingredients
For the Pizza Dough: (or use store-bought dough)
• 2 1/4 teaspoons (1 packet) active dry yeast
• 1 cup warm water (110°F)
• 2 1/2 cups all-purpose flour
• 1 teaspoon salt
• 1 tablespoon olive oil
• 1 teaspoon sugar
For the Mashed Potatoes:
• 2 medium russet potatoes, peeled and cubed
• 1/4 cup whole milk or heavy cream
• 2 tablespoons butter
• Salt & black pepper to taste
• 1/4 teaspoon garlic powder (optional)
For the Toppings:
• 6 slices bacon, cooked and crumbled
• 1 1/2 cups shredded mozzarella cheese
• 1/2 cup shredded white cheddar cheese
• 1/4 cup grated Parmesan cheese
• 1/2 teaspoon dried thyme (or fresh thyme for garnish)
• 2 green onions, finely chopped (for garnish)
• 1 tablespoon olive oil (for brushing the crust)
Instructions
Step 1: Prepare the Dough (Skip if using store-bought dough)
1. In a mixing bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes until foamy.
2. Add flour, salt, and olive oil. Mix until a dough forms.
3. Knead for about 8 minutes until smooth and elastic.
4. Place in a greased bowl, cover, and let rise for 1 hour until doubled in size.
Step 2: Make the Mashed Potatoes
5. Boil the cubed potatoes in salted water for 15 minutes until fork-tender.
6. Drain and mash with butter, milk, salt, and black pepper until creamy. Set aside.
Step 3: Preheat and Shape the Pizza
7. Preheat oven to 475°F (250°C). If using a pizza stone, place it in the oven to heat.
8. Roll out the dough into a 12-inch circle and place it on a pizza peel or baking sheet.
9. Brush the crust with olive oil.
Step 4: Assemble the Pizza
10. Spread a thin layer of mashed potatoes over the dough, leaving a small border.
11. Sprinkle shredded mozzarella and white cheddar evenly over the potatoes.
12. Add crumbled bacon and a sprinkle of dried thyme.
13. Top with Parmesan cheese.
Step 5: Bake and Serve
14. Transfer to the oven and bake for 10-12 minutes, until the cheese is melted and bubbly, and the crust is golden brown.
15. Remove from the oven, garnish with green onions and extra Parmesan.
16. Slice and serve hot!
