Description
This Jiffy Mexican Cornbread is a moist, flavorful cornbread packed with cheese, green chilies, and a touch of spice. It’s the perfect side dish for chili, soups, or BBQ and comes together easily with Jiffy Corn Muffin Mix.
Ingredients
• 2 (8.5 oz) boxes Jiffy Corn Muffin Mix
• 1 cup whole milk
• 2 large eggs
• 1/2 cup unsalted butter, melted
• 1 cup canned creamed corn
• 1/2 cup shredded cheddar cheese
• 1/2 cup shredded Monterey Jack cheese
• 1/2 cup diced green chilies (canned)
• 1/4 cup finely chopped jalapeños (optional)
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
Instructions
1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish or a cast-iron skillet.
2. In a large bowl, combine Jiffy Corn Muffin Mix, milk, eggs, and melted butter. Stir until just combined.
3. Fold in creamed corn, both cheeses, green chilies, and jalapeños (if using). Season with salt and pepper.
4. Pour the batter into the prepared baking dish and spread evenly.
5. Bake for 30-35 minutes or until golden brown and a toothpick inserted into the center comes out clean.
6. Let it cool slightly before serving.
Notes
• For extra spice, add a pinch of cayenne pepper or more jalapeños.
• If you prefer a sweeter cornbread, add 1-2 tablespoons of honey.
• Serve with butter, sour cream, or a drizzle of honey for extra flavor.
