Ingredients

• 4 fillets of white fish (cod, haddock, or sea bass)

• 8 sheets filo pastry

• 4 tbsp melted butter or olive oil

• 1 small lemon, zest and juice

• 2 cloves garlic, minced

• 1 tsp Dijon mustard

• 1 tbsp fresh parsley, chopped

• ½ tsp salt

• ½ tsp black pepper

• ½ tsp paprika (optional)

• ½ cup baby spinach or sautéed leeks (optional, for extra filling)


Instructions

1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Prepare the Fish: Pat the fish fillets dry with paper towels. Season with salt, pepper, lemon zest, and paprika (if using).

3. Make the Butter Mixture: In a small bowl, mix melted butter (or olive oil) with minced garlic, Dijon mustard, lemon juice, and chopped parsley.

4. Layer the Filo Pastry: Lay out one sheet of filo pastry, brush with the butter mixture, then place another sheet on top. Repeat with the remaining sheets to create 4 sets of double-layered filo.

5. Wrap the Fish: Place a fish fillet in the center of each filo stack. Add a few spinach leaves or sautéed leeks on top if using. Brush the edges with butter, then fold the filo over the fish, tucking in the sides like a parcel. Place seam-side down on the baking sheet.

6. Bake: Brush the tops with more butter and bake for 20-25 minutes, or until the filo is golden and crisp.

7. Serve & Enjoy: Let cool slightly before serving. Garnish with extra parsley and serve with a side of lemon wedges and a fresh salad.

Notes

For extra crunch, sprinkle sesame or poppy seeds on top before baking.
