Description
These Air Fryer Potato Skins are crispy on the outside, soft on the inside, and packed with creamy cottage cheese for a high-protein twist. A perfect healthy snack or appetizer for any occasion!
Ingredients
• 3 medium russet potatoes
• 1 tablespoon olive oil
• ½ teaspoon salt
• ½ teaspoon black pepper
• ½ teaspoon garlic powder
• ½ teaspoon smoked paprika (optional)
• ¾ cup cottage cheese
• ¼ cup shredded cheddar cheese (optional)
• 2 green onions, sliced
• 4 strips cooked turkey bacon or plant-based bacon, crumbled (optional)
• 1 teaspoon hot sauce or red pepper flakes (optional)
Instructions
1. Preheat & Prep: Set your air fryer to 400°F (200°C). Scrub potatoes clean and pat dry.
2. Cook Potatoes: Pierce each potato with a fork. Rub with olive oil and sprinkle with salt. Air fry for 35-40 minutes, flipping halfway, until fork-tender.
3. Cool & Scoop: Let the potatoes cool slightly, then cut them in half. Scoop out most of the flesh, leaving a ¼-inch border to hold their shape.
4. Season & Air Fry Again: Brush the inside of each potato skin with olive oil, sprinkle with garlic powder, black pepper, and paprika. Air fry at 400°F (200°C) for 5-7 minutes until crispy.
5. Fill & Melt: Spoon cottage cheese into each potato skin, sprinkle with cheddar cheese (if using), and air fry for another 2-3 minutes until warm.
6. Garnish & Serve: Top with green onions, crumbled bacon, and a drizzle of hot sauce if desired. Serve warm and enjoy!
Notes
• Use sweet potatoes for a different twist.
• Add chopped veggies like bell peppers or tomatoes for extra freshness.
• Make it vegan by using dairy-free cottage cheese and plant-based bacon.
• Save the scooped-out potato flesh to make mashed potatoes later!
