•3 large egg yolks

•1 teaspoon vanilla extract

•7 ounces bittersweet chocolate (66% cacao)


Instructions

1.Whisk sugar, cocoa powder, cornstarch, and salt in a saucepan.

2.Slowly add milk, whisking until smooth.

3.Cook over medium heat, stirring constantly, until thickened.

4.Remove from heat and temper the egg yolks by gradually adding a small amount of the hot mixture.

5.Return to heat and cook until fully thickened.

6.Stir in butter, vanilla extract, and bittersweet chocolate until melted.

7.Pour the filling into the pie crust and smooth the top.

8.Let cool at room temperature, then refrigerate for 2 hours.
