Description

Ingredients
1.5 lbs chicken thighs or breasts
2–3 chipotle peppers in adobo sauce
2 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons fresh lime juice
1 tablespoon honey (optional)
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1.Prepare the Marinade:
•In a blender or food processor, combine chipotle peppers, garlic, olive oil, lime juice, honey, cumin, paprika, salt, and pepper. Blend until smooth.
2.Marinate the Chicken:
•Place the chicken in a large bowl or resealable bag. Pour the marinade over it and coat evenly. Refrigerate for at least 30 minutes, or overnight for better flavor.
3.Cook the Chicken:
•Grilling: Preheat the grill to medium-high heat. Cook the chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C).
•Pan-Searing: Heat a skillet over medium heat. Add a little oil and sear the chicken for 6-8 minutes per side, covering the pan for the last 2 minutes.
•Baking: Preheat the oven to 400°F (200°C). Arrange the chicken on a lined baking sheet and bake for 20-25 minutes, flipping halfway through.
4.Rest and Serve:
•Let the chicken rest for 5 minutes before slicing. Serve with rice, tacos, or salads.
Notes
For a milder flavor, use fewer chipotle peppers.
You can substitute honey with maple syrup for a slightly different sweetness.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
