A quick and flavorful chicken taco recipe that’s perfect for weeknight dinners or taco nights. Tender chicken is seasoned and cooked to perfection, then loaded into warm tortillas with fresh toppings.
Ingredients
•2 boneless, skinless chicken breasts (or thighs)
•2 tbsp olive oil
•1 tsp chili powder
•1 tsp cumin
•1/2 tsp smoked paprika
•1/2 tsp garlic powder
•1/2 tsp onion powder
•1/2 tsp salt
•1/4 tsp black pepper
•Juice of 1 lime
•8 small corn or flour tortillas
•1/2 cup chopped cilantro
•1/2 cup diced onions
•1/2 cup chopped tomatoes
•1/2 cup shredded lettuce
•1/2 cup shredded cheese (cheddar or Mexican blend)
•1/4 cup sour cream
•1/4 cup salsa or hot sauce
•1 avocado, sliced
•Lime wedges for serving
Instructions
1.In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
2.Coat the chicken with the spice mix, drizzle with lime juice and olive oil.
3.Cook chicken in a skillet or on a grill over medium heat for 6-8 minutes per side until fully cooked.
4.Remove from heat and let rest for 5 minutes before slicing or shredding.
5.Heat tortillas in a dry skillet or microwave until warm.
6.Fill tortillas with chicken and add toppings like onions, tomatoes, lettuce, cheese, avocado, and cilantro.
7.Add sour cream, salsa, or hot sauce to taste.
8.Serve with lime wedges and enjoy!
