Description

This Anjappar-style Egg Fried Rice is a delicious and aromatic dish influenced by South Indian Chettinad flavors. Ingredients

• 2 cups cooked basmati rice (cooled)

• 3 eggs, beaten

• 2 tablespoons oil (preferably sesame or peanut oil)

• 1 teaspoon ghee (optional, for extra flavor)

• 1 small onion, finely chopped

• 1 green chili, slit

• 1 teaspoon ginger-garlic paste

• ½ teaspoon black pepper powder

• ½ teaspoon red chili powder

• ½ teaspoon garam masala

• ½ teaspoon soy sauce

• ½ teaspoon vinegar

• 1 teaspoon salt (adjust to taste)

• ½ teaspoon sugar (optional)

• 2 spring onions, chopped

• 1 tablespoon fresh coriander, chopped


Instructions

1. Heat oil and ghee in a large wok or pan over medium-high heat.

2. Add chopped onions and green chili, sauté until soft and slightly golden.

3. Stir in ginger-garlic paste and sauté until fragrant.

4. Push the onions to the side of the pan and pour in the beaten eggs.

5. Scramble the eggs until cooked, then mix with the onions.

6. Add black pepper, red chili powder, and garam masala. Stir well.

7. Add the cooled cooked rice, soy sauce, vinegar, salt, and sugar. Stir-fry on high heat for 2–3 minutes until well combined.

8. Garnish with chopped spring onions and coriander.

9. Serve hot with raita or spicy curry.

Notes

• For the best texture, use day-old rice or ensure the rice is cooled before stir-frying.

• You can enhance the flavor by adding a dash of MSG (Ajinomoto), just like in restaurant-style fried rice.

• Adjust spice levels by increasing or decreasing black pepper and chili powder.

• A squeeze of lemon juice before serving adds extra freshness.
